Well when I bought the waterpump, I specifically bought a new one instead of a Reman, because I thought it would be more reliable. But the damn box said Made in China. 
But less than 8k miles later, the damn thing is leaking. At least that is under warranty, but I will still have to deal with the labor of replacing it, plus have to refill it with another 30+$ worth of coolant.

How would I recover it without contaminating it in my oil pan?
If I had a way to do it, that would be a good idea. The coolant was replaced a few months ago when the pump was. Also, if I replace the AC compressor myself like you suggested, I might put off the water pump and replace everything at once. It looks like it would be much easier to get the compressor off if the water pump wasn't in the way. 
Just filter the coolant through an old t shirt. Nothing fancy just something to keep the contaminates out that might have gotten in it. I do it all the time when I have to go back into a coolant system shortly after filling it with fresh. Like my jetta when the head gave me issues and then the new one was manufactured wrong.

I catch it in a 5 gallon bucket or a cut-off 5 gallon bucket. You can buy a 5 gallon bucket cheaper than a gallon of coolant.

But on the AC, I wonder if I can have it discharged at a shop then refill it myself after I replace the compressor. Or should I leave that to the Pros? I have added refrigerant before, but never to a completely empty system. I have a thingy (can tap) with a guage on it to add refrigerant, but it only says low, full, and DANGER!! on it. It not a professional guage with numbers, its one from the parts store to just top off your system.

I would have a shop charge it so they put in the right amount of oil.
