Well I have never heard that, but unless you are also lowering the filter (meaning some type of modification) then the extra quantity of the pan really should have no relevance on the normal running level.
I guess what I'm trying to say is, just because the pan holds X number of quarts more, doesn't mean you can run the level X number of quarts lower than stock and still be ok. Does that make any sense?
