That small tree-limb looking thing sticking out of the side of the steering wheel column. Sit in your driveway with your foot on the brake and move it up & down all the way in each direction. One of those notches should put the transmission into "Manual" (M) mode.
That's what they're referring to. After it's in manual mode, you can use the up/down arrows to select gears.
I used to not notice my Silverado switching in and out of V4 mode, but I've really started noticing it in the last year or so and I REALLY notice it in the Camaro. *facepalm*

Shift all the way past "D" to "M" then hit the + on the shift lever until the display says 5.
Seems like a lot of work, on my Ram all I have to do is hit the button on the end of the shifter. I guess Chevy "knows better" :shrug:
