The fuel is turned way up on the engine to get the most power. I would bet that truck is also running water/ meth due to the grey tint to the smoke as it's spooling up. Unfortunately the whole room fills with smoke but if you look closely, the stack starts to clear as the turbo spools up and the engine starts to get the correct amount of air.
AFR on this truck is probably low in the single digits.
