I voted Double, I don't care if you're building a stock plant or a high power plant. The extra cost is nothing for peace of mind.

Roller chains have less friction and than non roller chains correct?

Also I'd use a double, your a lot less likely to snap a double chain vs. a single although you may never experience breaking a single its worth the extra peace of mind.
