Labor day Ribs

    I was all excited cuz I planned this bbq for my friends and family before I knew Dave was on his way down. Unfortunately Dave couldn't stick around to enjoy these ribs. I got six racks of spare ribs and one rack of dino bones. Rubbed the spares with Oakridge BBQ Secret Weapon rub and put the Beef And Pork Comp rub on the beef. I had two small pork buts too but didn't get any pics. Trimmed the spares St Louis style and let them smoke for three and a half hours with hickory and a little mesquite wood. Hit them with a thin layer of Bull's Eye. Let them rest and then sliced them up.

    Now I have to admit that Beef ribs are my unicorn, I am hardly ever satisfied with the way they turn out. These cooked beautifully! Meat came right of the bone and they were juicy and that smoke ring.... :drool:I could have gone heavier on the rub though. Next time I'm giving them a second rub right before they go in the smoker. Both my smokers had a great day yesterday!

    Gary I know I owe you big time. I cant promise anything for this month but hopefully October will be the month. My dream is to have a National :tmc: meet and go nuts, that way Carl can insult me in person! :lol:

    Those ribs look almost as good ad the George Foreman burger I had for dinner...NOT. :drool:

    Don't get me wrong, its pretty damn good as well as quick and easy but it ain't no smoked ribs.

    Next time I am being the Dave type of smoke rings. They make me hungry so it will mix well with ribs.
