See if Clymer makes a repair manual for your machine. They are not quite as good as a factory service manual, but they are certainly not as useless as a Chilton or Haynes manual.

Is the cylinder itself dry? If so, does it want to fire if you hold the choke and/or have the throttle wide open? If so, your idle jet is probably clogged. Very easy to miss that, the idle jet is tiny, carb cleaner and compressed air doesn't always clear it. I usually take the jets out and boil...

Hmm, probably not going to find a temp gauge that fits there, let alone one that matches the others closely. If you don't already have a tach, I would mount one there instead and work on finding some other place for a 2-1/6" trans temp gauge.
You will most likely have to go aftermarket since finding a temp sensor that will work with an OE gauge and easily install to the transmission will be fairly tricky.
No, you shouldn't have any problems as long as you use an electric gauge. The gauges should be almost exactly the same, except they will be marked water temp instead of trans temp, and the gauge range might be slightly different.
Could you post pics of the gauges and where you'd like to put the temp gauge?
Protip: You can use a water temp gauge for this purpose, that will expand your choices.
