Haha my understanding is it's just the skid plates etc that would come on a z71 4x4 just on a 2wd.

Since z71 4x4 is diff from just a 4x4
You are correct. Until the 07-11's came out, Z71 was purely for 4x4's, but now there is a Z71 appearance package (I don't know what it includes). Personally, I think they should have left the package for 4x4's only.

Don't they also have the Z71 package in the Colorado/Canyon along with the Tahoe and possibly Suburban?

The Z71 package on my truck got you bigger tires (265/75R16 vs 245/75R16), Bilstein shocks, and the skid plates.
